Roasted Vegetables


Ingredients

red peppers
baby eggplant
portobello mushrooms
etc...



Instructions

Select firm, colorful vegetables such as red peppers, baby eggplant, portobello mushrooms, etc. Trim as necessary and cut into 1/4 inch pieces that will fit on the crostini. Brush lightly with olive oil, sprinkle with kosher salt and black pepper. Roast at 400 degrees until the vegetables are tender, about 15-20 minutes.
